Single Estate 70% Dark Chocolate Bar

We love the depth of flavour in this bar. The epitome of dark chocolate. It’s our favourite.

The cacao inside this chocolate is the Trinitario varietal. We settled on a cooler roast profile to capture notes of honey, grape and toasted walnut.

We hand sort, roast, crack, winnow and stone grind for up to 80 hours before ageing our chocolate. We then temper, mold and hand-wrap each bar in our little factory in Wellington, New Zealand.

Fig & Nib 70% Dark Chocolate Bar

We are in love with the balance of smooth, crunchy, sweet, and bitter of this bar.

Fig pieces have been carefully dried and woven through dark chocolate by hand. A sprinkle of crunchy roasted cacao nibs have been added on the back to finish. This is a bar that is hard to put down.

The Trinitario organic cacao inside this bar is from the Fazenda Camboa cacao farm in the state of Bahia, Brazil. Lightly roasted to capture the grape and honey flavours, the cacao is then granite stone ground for 72 hours, whilst maintained at cooler temperatures to preserve its flavour.

Handsorted, roast, crack, winnow and stone grind for up to 80 hours before ageing our chocolate. We then temper, mold and hand-wrap each bar in our little factory in Wellington, New Zealand.

Hazelnut, Orange & Sea Salt 52% Dark Chocolate Bar

We are really happy with this bar. It contains 20% roasted New Zealand hazelnuts; stoneground with our single-estate cacao, resulting in a soft, buttery texture. The sweet orange and sprinkle of Marlborough sea salt lift this bar to a whole new level of deliciousness. We just can’t get enough of it.

The cacao inside this chocolate is the Trinitario varietal. A slightly hotter roast profile was used to create a more stable base for the hazelnut flavour.

We hand sort, roast, crack, winnow, and stone grind for up to for 80 hours before ageing our chocolate. We then temper, mold and hand-wrap each bar in our little factory in Wellington, New Zealand.

Toasted Milk 50% Milk Chocolate Bar

Our very first milk chocolate bar. A creamy milk chocolate, with lingering notes of toasted caramel.

Toasted Milk, the name pretty much sums it up. We roast New Zealand 100% whole milk powder just enough to capture the perfect amount of caramelised flavour. It’s then added to our stone melanger where it refines with our Fazenda Camboa organic cacao for over 72 hours.

Stoneground Espresso 67% Dark Chocolate Bar

For the coffee chocolate fans out there, this is for you. This one took some time to perfect. We tested a range of coffee blends, searching for flavour notes that would complement our cacao. Flight Coffee are experts when it comes to coffee, their B2 blend was a perfect fit.

The cacao inside this chocolate is the Trinitario varietal. During roast testing we discovered a hotter profile gave us a complementary base for the coffee flavour to express itself. You’ll notice some notes of grape coming through before the bitterness takes hold. This bar is not for the faint hearted.
